Usedom/Rostock, June 25, 2025 - Guests at the Hotel Kaiserhof Heringsdorf, one of the leading hotels in Usedom's imperial spas, can now enjoy the pleasures of wellness at the very top with a breathtaking panoramic view of the Baltic Sea. The new 17 square meter sauna on the roof terrace was opened at the end of May. It is made of thermally treated Scandinavian pine wood, has panoramic windows, a multi-LED lighting system and benches made of Thermo-Espe. This exclusive wood has a noble, dark color and is ideal for sauna construction. The new sauna can be heated to a crisp Finnish 90 degrees Celsius and can accommodate eight seated and four reclining people, who can also enjoy infusion rituals with essential oils and Thalasso peelings.

Weimar, November 26, 2024 - The Hotel Elephant Weimar impresses across the board: this is confirmed by two recent awards that not only recognize the hotel, but also the top achievements of the chef. Hotel Director Stefan Schwind celebrated the Elephant Weimar's selection as one of the “101 Best Hotels in Germany 2025” at a lavish gala on Lake Chiemsee, which is considered one of the most important industry events in the hotel industry. The jury of the renowned Aral Schlemmer Atlas had already honored chef Johannes Wallner at the end of October: He was voted one of the “50 best chefs in Germany”, as announced by the Busche publishing house at a gala in Hamburg.

Hee-Sun Kim - dynamism and innovation
Hee-Sun Kim, born in Berlin, has an impressive career in the restaurant industry. He was Restaurant Manager at The Grand Hotel Ahrenshoop from 2021 to 2023, where he successfully managed both the tapas restaurant Zimtziege and the restaurant Weitblick. There he implemented new quality standards and trained the service staff.
Previously, he was Hotel Manager of the Fontane Hotel on Lake Werbellin from 2019 to 2021 and carried out extensive restructuring and modernization. As Managing Director of Alverdes Restaurant, he developed an innovative Asian-Oriental fusion cuisine concept in 2018/19. Kim lives with his family in Ribnitz-Damgarten.
Alexander Dressel - Excellence and experience
Alexander Dressel, is an experienced chef and hotel manager. With a Master of Business Administration (MBA) and a solid training as a chef, he successfully managed the Romantik-Hotel Bayrisches Haus in Potsdam for 16 years. During his tenure, the gourmet restaurant was continuously awarded a Michelin star.
Dressel is known for his outstanding leadership qualities and entrepreneurial mindset. His professional career includes positions as head chef and hotel manager in renowned hotels and restaurants in Germany and Italy. He was also involved for many years in various positions with Jeunes Restaurateurs Deutschland e. V., most recently as President of the German association and Vice President of the European umbrella organization, and was committed to promoting young talent in the gastronomy sector.
Shared vision for "Zur historischen Mühle"
With Hee-Sun Kim and Alexander Dressel, a dynamic and competent team is taking over the management of "Zur historischen Mühle". The two restaurateurs complement each other perfectly and bring both fresh ideas and proven concepts to the table. Together with the team, they have already developed exciting new ideas to make the restaurant a popular destination for Potsdamers once again.
Since the beginning of July, there has been an extensive breakfast menu for the whole family at weekends and on public holidays. A picnic offer will also be introduced shortly, where guests can pick up pre-ordered picnics and take them with them to the Schlössernacht, for example. The team will be working on a new concept until the fall, which will include opening the restaurant in the evening.
"We are looking forward to delighting guests with first-class service and culinary highlights. Our aim is to further establish 'Zur historischen Mühle' as one of the top addresses in Potsdam, from the beer garden to the restaurant and the event area," say Kim and Dressel.
Dressel adds: "Then as now, I am thrilled by the steady development of the city. I like the certain coziness compared to the "hectic suburbs of Berlin". Now I am looking forward to a new task in Potsdam. For a long time, most guests associated the Historische Mühle with the gastronomic concept of the previous operator. The change has now made a reorientation necessary. It's an exciting task and I'm looking forward to being able to contribute my experience to the collaboration. Of course, we also want to keep the tried and tested or add it to the program. The location of the Historische Mühle is unique and offers many opportunities. I am confident that we will succeed in becoming not only a place for tourists to visit, but also a restaurant for the people of Potsdam and a popular event location.

The restaurant "Zur Historischen Mühle" in Potsdam, located between the historic mill and Sanssouci Palace, offers a unique combination of tradition and culinary excellence.
